It’s been a LONG time since I’ve made this but with the Whole30 failure over, I’m ready to dive in to some long time favorites again!
So, let’s get something out of the way, shall we? I’m not a fan of the so-called “low carb” plan but do realize that most people mistake the general Paleo way of eating to be low carb. It’s not. And THIS dish? It’s not Paleo but it IS low carb, I suppose …
I do consider this to be a frugal meal as I almost always have bacon and chicken on hand … throw in some pantry staples of canned shrooms and whatever cheese you have on hand and YES, it’s frugal if it kept you cooking in your own kitchen! This is seriously something that you would order in a restaurant and I bet, $16 and up is the going price!
The recipe is pretty simple:
Boneless skinless chicken breast, cut them in half (butterfly) so that you have two thinner pieces (I almost always use 3 pieces of chicken to create 6 total)
Bacon … about 2 to 3 pieces for each piece of thin chicken (in my case, 12 slices)
Cheddar cheese, either shredded or slice, whichever you have
Provolone cheese, shredded or sliced. You really can use any kind of cheese you want!
Mushrooms (optional, I used a small can of shrooms)
Honey Mustard Dressing (I made mine)
Mrs. Dash (original, or any other seasoned salt you have on hand)
Are you ready to give this a shot? Let’s hop to!
Fry up the bacon til crispy. Drain bacon on paper towel, paper bag, whatever. Do NOT drain the bacon fat from pan.
While that’s cooking, sprinkle the chicken with seasoning, both sides.

Add chicken to the pan that you cooked the bacon in and cook chicken over medium heat, flipping when one side is golden. Cook til no longer pink inside … remove to plate and keep warm while you finish cooking all of it.
Line a baking sheet with tinfoil. This is totally optional but you will see why I suggest it at the end of the post!
Spread the cooked chicken with a little (or a lot) of the honey mustard dressing, and brush it all over the top side only.
And, hey, sorry for the funky green plate … it’s a favorite plate but does NOT compliment the chicken at all
Move the chicken to the baking sheet and place a layer of bacon, the shredded cheddar cheese, the shrooms and then top with half a slice of provolone.

HALF SLICE PROVOLONE CHEESE
Bake at 350 (or if you are adventurous and REALLY watching things, BROIL) til the cheese is bubbly and melted.
Remove from oven, carefully dish up and serve with a side veggie (I opted to do spicy green beans) and serve.
I wanted shrooms on the ones for me and Hubby so I dug around in the pantry and came out with these in hand
Clean up was really easy … all I really had to deal with was the frying pan …
Pull off the foil and ….
a CLEAN pan! I do NOT endorse cheap/thin tin foil for this reason!
Tossed in a jar of salad for me on the side along with more of the honey mustard dressing and whoopee … I was one HAPPY camper for dinner!
