BBQ Beef & Bacon – Paleo Style

BBQ Sauce? Check!

Bacon? Check!

Paleo? You bet! Whole30? Maybe not so much, however, Jessica DOES share a recipe with sauce sweetened with dates, not sugar or honey or anything else like that … so maybe …

But … I’m not aiming for Whole30 with this meal. IF I was, I would just use this bottle of Tessemae’s Barbeque Sauce for simplicity. Psst … I did use Tessemae’s sauce anyway!

Anyways … I’ve had this recipe saved for a little while from Jays Baking Me Crazy (go check it out!) and figured, what the heck, it’s Saturday *God Bless Saturdays!* (bonus point if you can tell me who sings that?), I’ve got 2 pounds of ground beef in the fridge that needs cooked, 1 pound of low sodium bacon (aka, sugar free from Aldi), onions and that there BBQ Sauce, so why NOT?!

This cost $2.99 after the markdown … scooped up 4 packages and tossed them in the freezer a few months ago. 

What I really wanted to do was make the Sweet Potato Rounds, top them with the beef mixture and bake them a little more … but I didn’t have any normal sweet potatoes so I skipped out on that … I’m thinking that cutting the potatoes lengthwise would be the key … however, you can certainly serve it in a bun, over riced cauliflower, over some zoodles OR, like I did … just plain in a bowl … (for my meal prep, I did 2 containers with riced cauliflower and a few generous scoops of the beef mixture which is making me excited for that meal when I pull it out!)

Okey dokey, let’s get cooking!

1 pound ground beef
1 onion, chopped. If Hubby was here, I would have chopped smaller
1/2 pound bacon (opt for low or no sodium for sugar free bacon!)
1/4 tsp salt (I used himilayian salt)
1/4 cup coconut aminos (alternative to soy sauce)
1/2 cup bbq sauce (Tessemae’s makes a nice, clean sauce!)
sliced green onions to garnish

I’ve seen this at Publix lately and NOW I hear Trader Joe’s has coconut aminos too … gonna have to check it out soon!

Ready Freddy?

Grab a pair of scissors and cut your bacon slices in eight pieces.  Toss these in a large skillet and cook over medium heat til done. Drain on some paper towel and set aside.

Add the onions to the bacon fat and saute til soft, about 5 minutes or so.  IF there is a lot of bacon fat, feel free to drain some out (I did).

Add your ground beef and salt to the onions and cook through, breaking up with a wooden spoon as it cooks.

Once beef is cooked all the way, add the coconut aminos and the bbq sauce and stir well. Allow to heat through til simmering.

Hopefully you were smart enough to hide the bacon to avoid the pilfering that goes on in my house and have a lot of bacon still. Stir in half the bacon right before serving and garnish with additional bacon and green onions.  I’m serving mine over riced cauliflower. Next time will be over a baked potato as the original recipe calls for!
