Simple Orzo Salad

Hey, hey … we made it through Hurricane Irma … that was one LONG storm and after that, I’m not so sure I’d stick it out for another one!

Our weather station bit the dust as for the wind thingy … but the rain gauge shows we got over 13 inches of rain.

And the power went out at 4am Sunday. Came back on at 5pm Tuesday. THAT was a miracle in my mind.

So onward with #Shelftember!

Sort of. See, I had to toss a few things from the freezer AND I’ve been feeding 6 adults as to the usual two of us … hurricanes have a tendency to bring unexpected guests! It’s fine, I’m glad that we are able to help, trust me.

So, that brings me to this recipe. Me and the Princess ran to my office on Thursday morning so she could print out some labels for her baby shower while I tried to get my office back in order. That didn’t happen, really, as we had some water damage in the two offices that face south due to the 8 plus hours of driving rain and wind! Whatever.  We stopped at Trader Joe’s on the way home to pick up a few things (lettuce, tortilla chip, etc. as we are making tacos tonight) and this is what they were sampling … oh so on it as it was super simple!

Here’s what you need … you can pick up these ingredients WHEREVER you want for probably less money!

1 bag of orzo
2 cans of cannellini beans
1 tub of cherry tomatoes
8 oz bottle of red wine vinaigrette (honestly, make this yourself! I’m just beat)
Onion Salt (ok, you could just use regular seasoning salt and maybe some onion powder if you don’t have this stuff!)

Get yourself a large pot of water boiling.

Open up those cans of beans and dump them in a colander and rinse well.

Grab your tomatoes and rinse well, drain and cut them babies in half. Toss them in the colander with the beans to hang out for a bit.

Once the water is boiling, open your bag of orzo, notice that the top line is upside down (?) and dump the pasta into your boiling water. Give a quick stir, look at the clock and calculate 9 minutes from now.

Dump the beans and tomatoes into a large bowl. Trust me, go larger than you think you need. See how much room those beans took?

Once the orzo has boiled for 9 minutes, drain in that same colander and give a quick spritz with some cold water to stop the cooking. Drain well and dump in the large (larger) bowl.

Dump all the dressing in. Generously season with onion salt OR your seasoned salt. Add a little black pepper as well, just because.

Mix well with large spoon, take a taste and season more if needed.

Because we’ve been busting our butt around here for the past week, no one could wait for this to chill in the fridge. Best if you do, allow it to chill for an hour or so.

Serve up and enjoy! *We enjoyed this with tuna salad sandwiches on toasted english muffins because we are still in #Shelftember mode!
